Watercress Pesto

Yields 1 Quart

Ingredients for Watercress Pesto

2 bunches Watercress, picked free of stems
1 bunch Italian Parsley, picked free of stems
1½ tbsp Garlic, peeled & minced
2 tbsp Shallots, peeled & minced
2 oz Pinenuts, roasted golden brown
2 oz Pecorine Romano, grated
4 fl. oz Lemon Juice, fresh squeezed
14 fl. oz Extra Virgin Olive Oil
1 tbsp Kosher Salt

Method for Watercress Pesto

• Place first 7 ingredients into food processor. Process until thick.
• Slowly add olive oil, season with salt at the end. Additional salt may be used as needed.
• Transfer to a clean, dry container and store at 41° or below.
