Lemon Oil Vinaigrette

Yields 1 Quart

Ingredients for Lemon Oil Vinaigrette

3¼ cup Extra Virgin Olive Oil
6 Lemons, peeled & pith removed
10 oz Lemon Juice, from peeled lemons
1 tbsp Kosher Salt

Method for Lemon Oil Vinaigrette

• Peel lemons with a vegetable peeler and reserve.
• Place olive oil in a sauce pot with lemon peels and slowly heat to 120°.
• Remove from heat and let sit 1 hour.
• Add juice from the lemons. Season with salt.
