Halibut Amalfi

Serves 4

Ingredients for Encrusted Halibut

4-6 oz Alaskan Halibut Fillets
1 oz Heavy Cream
Parmesan Cheese
Black Peppercorns, cracked
1 tbsp Olive Oil
Salt, to taste

Ingrdients for Pesto Cream Sauce

2 large Bunches Basil Leaves
8 Garlic Cloves
3 tbsp Pine Nuts
Salt & Pepper, to taste
4 tbsp Pecorino Romano Cheese
2 oz Heavy Cream
½ cup Olive Oil

Method for Encrusted Halibut

• Combine parmesan cheese and peppercorns.
• Dredge halibut in heavy cream and coat in parmesan and peppercorns.
• Pan sear halibut in hot pan with olive oil for 2 minutes on each side until golden brown.
• Finish in 400° oven for 3-4 minutes.

Method for Pesto Cream Sauce

• Combine ingredients in a food processor.
• Blend until smooth.
• Heat in a saucepan and spoon over Halibut.
• Serve with risotto and your favorite vegetable.
