SLIGHTLY NORTH OF BROAD BIG G’S LIMAS

Ingredients

3 1 lb bags Dry, Big,White Lima Beans, soaked overnight then strained
2 lbs Smoked Neck Bones
2 lbs Pig Tails

Method

  • Boil pig tails and neck bones in 2.5 gallons of water until tender.
  • Take out of the pot to cook then pick meat off of bones (save bones to enrich other stocks).
  • Strain stock through strainer into pot then add beans (salt, pepper, butter or margarine to taste).
  • Let cook covered, simmering about 1 1/2 hours until done.
  • Add picked meat to pot 5-10 minutes before beans are finished.
  • Served with white rice and Fried Pork Chop, Collard Green or simply with corn bread
