1 qt Heavy Cream
1 qt Water
8 oz Butter
2 c Enriched White Hominy Grits
1 t Crushed Black Pepper
1 t Ground White Pepper
1 t Kosher Salt
1 lb Fresh South Carolina Shrimp, medium size, peeled and de-veined
6-8 oz Hickory Smoked Sausage


  • Clean and sanitize all pots, pans and utensils.
  • Bring water, cream and butter to boil.
  • Turn off heat before adding grits and spices.
  • Add grits and spices whisking occasionally until a rich and creamy texture occurs.
  • In separate saucepan, cook shrimp and sausage with melted butter for added flavor and to prevent sticking.
  • Add any lowcountry spices or seasoning, as you feel necessary.
  • A simple beef base gravy garnished with fresh chopped scallions is my favorite way to finish the dish, but you may find it fun to mix it up with your favorite vegetables.
