Boathouse Spicy Shrimp & Grits

Serves 4

Ingredients for Boathouse Spicy Shrimp & Grits

• 2# - Peeled and deveined shrimp
• 1# - Sliced andouille sausage
• 1 - Yellow bell pepper (sliced)
• 1 - Red bell pepper (sliced)
• 1 - Green bell pepper (sliced)
• 1 – Red onion (sliced)
• 4 – Cloves minced garlic
• 4Tbl – Chopped fresh parsley
• 1 – 16oz can high quality crushed tomatoes
• 2Tbl – white cooking wine
• 1/4 cup – Blackening seasoning
• 4 cups – Water
• 1cup – Milk
• 2Tbl – butter
• 1cup – Stone ground grits
• Salt and pepper to taste

Preparation for Boathouse Spicy Shrimp & Grits

In 4 quart sauce pan bring milk, water and butter to a boil. Add grits and cook till done than add salt and pepper to taste. In large sauté pan brown sausage and sweat peppers and onions about 3 minutes. Next add shrimp, garlic and blackening sauté till shrimp are 80% cooked. Deglaze with white wine and reduce about 1 minute. Add crushed tomatoes and simmer till shrimp are fully cooked adjust salt and pepper to taste. To serve spoon shrimp mixture over grits sprinkle with fresh parsley.
