Not So Ordinary Shrimp & Grits

Serves One Happy Soul

Ingredients for Shrimp & Grits

6 large Shrimp
3 Bacon strips
3 oz Stone Ground Grits
3 oz Chicken Stock
3 oz Sharp Cheddar Cheese
1 Jalapeno (remove seeds)
1 Whole Orange
1 cup Sugar
1 cup Water
1 Red Pepper
1 Green Pepper
½ cup Horseradish

Method for Shrimp & Grits

• Heat chicken stock to a boil, then add grits and cook 4-5 minutes. When stock is completely absorbed by grits add cheese and jalapeño and reserve for serving.
• Cut orange into chunks (rind and all) add water sugar and peppers.
• Bring to a simmer and cook for 20-25 minutes or until rind is soft.
• When cooked, place in a food processor and add horseradish. Blend together leaving some chunkiness and hold at room temperature.
• Cut bacon into 6 pieces.
• Wrap shrimp with bacon, pan sear until cooked all the way through.
• Layer grits in bowl, arrange shrimp and top with marmalade.
