Coconut Joe’s Coconut Shrimp

Serves 4

Ingredients for Spicy Orange Marmalade

16 oz Orange Marmalade
½ cup Dijon Mustard
½ cup Horseradish

Ingredients for Coconut Joe’s Coconut Shrimp

1 lb Large Shrimp
1 cup All Purpose Flour
2 cup Beer Batter
1 cup Sweetened Coconut Shavings
1 cup Unsweetened Coconut Shavings

Method for Spicy Orange Marmalade

• Combine all ingredients in a bowl and whisk until smooth.

Method for Coconut Joe’s Coconut Shrimp

• Devein and butterfly the shrimp.
• Toss the shrimp in all purpose flour.
• Dip floured shrimp into beer batter. Allow excess to drip off.
• Press the shrimp into a mixture of half sweet and half unsweetened coconut shavings. Be sure the shrimp are flattened completely and covered with coconut shavings.
• Gently shake off excess coconut and deep fry for one to two minutes.
• Serve with spicy orange marmalade.
