Pecan Brittle

Ingredients for Pecan Brittle

1 ½ cups Granulated Sugar
½ cup Water
¼ tsp Cream of Tartar
1 ½ cups Pecans, toasted & chopped

Method for Pecan Brittle

• In a small heavy-bottom sauce pot, dissolve the cream of tartar, sugar, and water.
• Place the pot over a medium-high flame. Brush down the sides with water every few minutes to avoid crystallization.
• While the sugar mixture caramelizes, place a sheet of aluminum foil on a sheet pan and smooth out the wrinkles.
• Brush the foil with a scant amount of vegetable oil.
• When the sugar reaches 300º, swirl in the pecans.
• Working quickly, spread out the mixture on the aluminum foil. The goal is to make the brittle as thin as possible.
• Allow to cool.
• Break into pieces and enjoy!
