Signature Black & Blue Burger

Serves 6

Ingredients for Braised Pork Belly

1 2lb. slab of Pork Belly
2 cups Brown Sugar
1 cup Kosher Salt
¼ cup whole Fennel Seed
¼ cup whole Mustard Seed
4 tbsp fresh Thyme, picked & chopped
6 Bay Leaves, crumbled
2 tbsp Freshly Ground pepper
1 tbsp Red Pepper flake

Ingredients for Truffled Aioli

4 Egg Yolks
2 tbsp Lemon Juice
2 tbsp White Balsamic Vinegar
1 tbsp fresh Thyme, fine chopped
½ tsp White Pepper
1 tbsp Kosher Salt granulated
1 tsp Garlic
1¼ cup Olive Oil
1¼ cup Truffle Oil

Ingredients for Signature Black & Blue Burger

48 oz of Black Angus Beef
6 slices braised Pork Belly
6 tbsp Blackening Seasoning
2 tbsp Bleu cheese, or to liking
Mixed Greens
Tomato, sliced
Truffled Aioli
6 Asiago Roll

Method for Braised Pork Belly

• Rub dry mix evenly over both sides.
• Wrap in plastic and allow to cure over night.
• Remove plastic and place fat side up in a pan with ½ inch of water.
• Cover with parchment paper, then wrap tightly with foil.
• Braise in oven at 200° for six hours.
• Allow to cool before removing and slicing.
• Cut ½ inch thick.

Method for Truffled Aioli

• Combine egg yolk, lemon juice, vinegar, thyme, white pepper, salt garlic in a robot coupe.
• Mix well then slowly drizzle in olive oil and truffle oil.
• Yields ½ quart or 20 servings.

Method for Signature Black & Blue Burger

• Season beef patty with blackening seasoning to your liking.
• Cooked to preferred temperature.
• Smear truffled aioli on bottom portion of roll.
• Lay beef on roll and cover with bleu cheese.
• Add slice of pork belly, followed by mixed greens, sliced tomato and more truffled aioli on the top bun.
