BONE'S SALAD

6 Servings

Ingredients for Raspberry Vinaigrette

1 Egg Yolk
1/2 c Raspberry Vinegar
1/2 c Dijon Mustard
3 T Sugar
1/2 t Basil
1/2 t Oregano
1 1/2 c Berio Olive Oil (not extra virgin)

Method for Raspberry Vinaigrette

  • Whisk first 6 ingredients in a bowl to blend.
  • Gradually whisk in oil.
  • Chill at least one hour before use. (Can be prepared 1 day ahead.)

    Ingredients for Salad

    6 Small Heads of Boston lettuce, washed and dried
    1 c Stilton Cheese, grated
    1 c Roasted Pistachio Halves, unsalted
    1/2 t Cinnamon
    2 Granny Smith Apples, cored and cut into 12 slices per apple

    Method for Salad

  • Sprinkle apples with cinnamon and set aside.
  • In a medium bowl, place washed Boston lettuce and pistachios and toss with raspberry vinaigrette.
  • Divide salad mixture into 6 servings and place on plates creaing a mound affect.
  • Arrange 4 apple slices around the edge of the mixture, spaced evenly apart and partially touching the plate. Serve.
