Broiled Gulf Coast Grouper

Ingredients:

5 ounces Grouper Filet
¼ cup Cooked Black Eye Peas
2 each Large Chopped Apple Wood Bacon
6 each Baby Spinach
1/4 each Shallot
1 each Minced Garlic Clove
1 Tablespoon Butter
2 ounces Tomato Vinaigrette
1 cup Salad Oil
Salt Pepper To Taste

Preparation:

Season Grouper with Kosher Salt & Pepper and
place ½ tables spoon butter on top and bake in
a 350 degree oven for 12 minutes.

In a medium heated sauté pan add chopped bacon
and cook until caramel brown (about 6-8 minutes).
Drain the oil, add butter, shallots, garlic sauté until
shallots become translucent and add black eye peas
season and sauté for 3-4 minutes.

Heat oil to 375 degrees with caution add spinach
allow to fry for about 1 minute then flip and fry for
another minute or two so that the spinach looks
translucent. Take out and place on towel to drain
and season with salt and pepper.

Place black eye mixture in center of plate add grouper
to the top and drizzle tomato vinaigrette on over fish
and around plate and top with fried spinach.
