Low Country Shrimp & Grits

Serves 1

Ingredients for Shrimp

8 ea 16/20 Shrimp, peeled & deveined
2 tbsp Flour
1 tbsp Canola Oil
¼ cup Corn
1½ tbsp Scallions, chopped
2 tbsp Crispy Bacon
White Wine
1 tbsp Garlic Butter
¼ cup Heavy Cream
1 pinch Salt

Ingredients for Grits

¼ cup Stone Ground Yellow Grits
1 cup Chicken Stock
¼ tsp Worcestershire Sauce
⅛ tsp Tabasco
1 pinch Salt
2 tbsp grated White Cheddar Cheese

Method for Shrimp

• Coat shrimp with flour.
• Lightly sauté shrimp in oil on both sides.
• Place remaining ingredients in the pan with the shrimp.
• Reduce until thick.

Method for Grits

• Bring chicken stock, worcestershire sauce, tobasco, and salt to a boil.
• Whisk in grits.
• Cook for 10 minutes, stirring occasionally.

To Plate

• Pour shrimp over grits.
• Finish with grated white cheddar cheese.
