Pecan Crusted Mahi

Serves 1

Ingredients for Pecan Crust

1 portion Mahi
1 cup Pecans
1 cup crushed Ritz® Crackers
½ cup Panko Bread Crumbs
1 tbsp Blackening Spice
Salt & Pepper, to taste

Ingredients for Sweet Tea Cream Sauce

1½ cups Sweet Tea
1½ cups Half & Half
½ cup Fish Stock
½ cup Vidalia Onions, small diced
5 tbsp Butter
3 tbsp Flour
Salt & Pepper to taste

Method for Sweet Tea Cream Sauce

• Melt butter in a medium sauce pot.
• Add onions and cook until soft.
• Add flour to make a roux and cook for 2 minutes.
• Whisk in remaining ingredients, lower heat and reduce until the right consistency.

Method for Pecan Crust

• Pulse Ritz® Crackers, panko bread crumbs and pecans in a food processor.
• Season with blackening spice, salt, and pepper.

Method for Mahi

• Marinate Mahi in buttermilk for 30 minutes.
• Take filet and dredge in crust.
• Sear in a hot.
• Turn fish and finish in 400˚ oven for 4-5 minutes.
• Top fish with crabmeat and sweet tea sauce.
