Pan Blackened Mahi

Serves 4

Ingredients for Mahi

4 6 oz Mahi filets
2 oz Sherry Scallion Cream
4 oz White Cheddar Grits
1 oz crispy fried Leeks

Ingredients for Sherry Scallion Cream Sauce

1½ cups Egg yolk
3 cups Ketchup
½ cup Sherry
2 cups Creole Mustard
1 tbsp White Pepper
½ tbsp Salt
3 cups Vegetable Oil
1 cup Mayonnaise
¼ cup Tabasco

Ingredients for White Cheddar Grits

2 quarts Water
1 tbsp Butter
2 tbsp Black Pepper
1 tbsp Salt
1 quart Grits
2 cups Heavy Cream
1 lb White Cheddar Cheese

Method for Sherry Scallion Cream Sauce

• Combine all ingredients and mix well.

Method for White Cheddar Grits

• In a pot, add water, butter, and heavy cream.
• Bring to a boil.
• Add grits and seasonings.
• Add cheese last.

Method for Mahi

• Season Mahi with cajun spice.
• Blacken in saute pan and finish in a 350° oven for about 7 minutes.
• Serve over white cheddar grits.
• Drizzle sherry scallion sauce and garnish with fried leeks.
