Crab Cakes

Serves 4

Ingredients for Crab Cakes

1 lb Jumbo Lump Crabmeat
1 whole Egg
1 tbsp Sherry
1 tsp Old Bay
1 tsp Celery Seed
1 tsp Horseradish
½ tsp Coleman’s Dry Mustard
1 tbsp Dijon Mustard
1 tsp Worcestershire Sauce
⅛ tsp Cayenne Pepper
½ cup ground Ritz Crackers

Ingredients for Sauce

1 cup Mayonnaise
2 tbsp Ketchup
1 tsp Coleman’s Dry Mustard
4 each Cornichon Pickles, chopped fine
¼ tsp White Pepper
1 oz Capers, chopped
2 tbsp Parsley, chopped
1 Hard Boiled Egg, chopped fine
Salt & Pepper, to taste

Method For Sauce

• Combine all ingredients in a stainless steel mixing bowl.

Method for Crab Cakes

• In stainless steel mixing bowl, prepare a dressing with mayonnaise and seasoning.
• Add crabmeat and lightly mix.
• Add ritz cracker crumbs and lightly mix.
• Refrigerate for 1-2 hours.
• Form into 4 cakes.
• On medium-high heat, add ¼ cup vegetable oil and 1 tablespoon of butter to a sauté pan. Add crab cakes.
• Cook until golden brown, flip to other side and finish in a preheated oven at 350° for 5-6 minutes.
