Shrimp and Italian Grits

Serves 4

Ingredients for Shrimp Gravy

1 lb medium Shrimp, cleaned & de-veined (no tails)
1/4 lb Bacon, diced
1/2 Red Onion, diced
1 cup Beef Stock
1/4 cup Roux
Ingredients for Italian Grits (Risotto)
4 oz Sausage, cooked & diced
1/2 cup Risotto
3-4 cup Chicken Stock
1 clove Garlic, chopped
1/2 cup shredded Parmesan
Salt & Pepper, to taste

Method for Shrimp Gravy

• Saute bacon and onions together in oil until brown.
• Add beef stock and roux. Stir until thickened.
• Fold in shrimp, and cook until done.

Method for Italian Grits (Risotto)

• In a medium pot, add oil, garlic and risotto. Saute
for 1 minute, add 1 cup of chicken stock.
• Cook on low heat, add more stock, as needed.
• When almost done, add Parmesan salt and pepper.

To Plate

• In a soup bowl, put 2 ounces of risotto.
• Top with gravy.
