Shrimp & Grits

Serves 4 - 6

Ingredients for Tasso Ham Gravy

½ Qt of heavy cream
4 oz of tasso ham cut into 1/4in cubes
½ Tb chopped garlic
2 tsp of chicken base
¼ tsp cayenne pepper
¼ tsp white pepper
¼ tsp black pepper
2 Tb of dried parsley flakes
2 Tb sherry wine
¼ cup of white roux*
½ oz olive oil

Method

White roux is made by mixing 6 oz of melted butter with 4 oz of white flour until it is smooth like butter
In a stock pot on high heat, add olive oil and heavy cream and bring to a boil
Then add white roux and stir constantly until roux has dissolved and the sauce has thickened
Turn to low heat and add remaining ingredients except sherry
Simmer and stir for 5 min
Remove sauce from stove, stir in sherry and cool

Ingredients for Shrimp & Grits

5 Ibs 40/50 shrimp 24 oz tasso gravy 64 oz grits (make with chicken stock) ½ oz olive oil 16oz chopped green onions 16 oz chopped tomatoes

Method

Place a sauté pan on high
Once pan is hot, add oil and shrimp
Cook the shrimp about half way and add tasso gravy, green onions and tomatoes
Pour sauce and shrimp over bowl of grits
