Chocolate Grand Marnier Soufflé

Serves 6

Ingredients for Chocolate Grand Marnier Soufflé

4 oz Sugar
8 oz Milk
2 oz Unsalted Butter
2 oz Flour
6 Egg Yolks
6 Egg Whites
2 oz Cocoa Powder
2 oz Grand Marnier

Method for Chocolate Grand Marnier Soufflé

• Coat 6 soufflé ramekins with butter and sugar and set aside.
• Boil the milk with 2 oz of sugar.
• Melt the butter with the flour to form a roux.
• Mix the sugared milk and the roux and boil again. Stir frequently.
• Add the egg yolks and Grand Marnier. Keep in a warm place.
• Whip the egg whites with 2 oz sugar until very stiff.
• Combine the yolk mixture and the egg whites with a spatula.
• Mix gently, while adding the cocoa powder.
• Fill the prepared ramekins with the batter, almost to the top.
• Bake in a preheated oven at 375 degrees for 20 minutes.
• Dust with powdered sugar and serve immediately.
