Pepato Macaroni & Cheese

This is a very easy and fast mac and cheese recipe, but it also has a lot of complexity. If you can''''t find Pecorino Pepato, substitute another Pecorino and use a generous amount of fresh ground black pepper.

Ingredients for Pepato Macaroni & Cheese

• 1 stick unsalted butter
• 1/2 cup flour
• 1 large shallot, finely diced
• 3/4 cup white wine
• 3 cups whole milk
• 3 cups grated Pecorino Pepato
• Cooked macaroni

Method for Pepato Macaroni & Cheese

• Melt butter over medium heat.
• Whisk in flour and stir for 2 minutes until it smells nutty.
• Add diced shallots and cook for 1 minute.
• Whisk in white wine and stir until mixture is smooth.
• Slowly pour in milk while whisking until it makes a smooth sauce.
• Slowly add grated cheese into sauce and stir until it is completely melted. If it is too thick, you can thin it with a little more milk.
• You can mix this right away with hot cooked pasta, or you can put it away in your fridge for later. It heats up and melts really well on the stovetop or in the microwave.
