Executive Chef, Matthew Farmer

Chef Matthew Farmer was born in Metairie, Louisiana and has loved cooking since the age of 6 when his Aunt Carol gave him his first cookbook entitled "Strictly for Boys". After graduating from De La Salle high school, it took him a brief stint studying business at LSU to make him realize that cooking should be his career not just his passion. After enrolling in a local culinary program, he began working at Sandro's Trattoria, and after graduation became the Head Chef. Eventually his thirst for knowledge and experience led him to other kitchens throughout the city, until he settled in as the Sous Chef at Salu in Uptown New Orleans. In late 2011 he accepted the Executive Chef position at Apolline Restaurant where he continually strives to make creative dishes with fresh, locally grown ingredients. He is known for his French Contemporary cuisine with Creole influences.
