Shepherd's Pie

8-10 Servings


31 lb Ground Beef (ground Sirloin 80/20)
12 oz Carrots (diced into 1/4 inch cubes)
6 oz Peas (frozen)
12 oz Onions (diced small)
3 lbs Potatoes (mashed)
3 pints Demi-Glaze
3 T Vegetable Oil
1 pint Water


  • Spoon ground beef and vegetables in serving dish, pipe mashed potatoes on top.
  • Reheat in oven for 15 minutes at 350 degrees until the mashed potatoes are lightly brown.


  • Heat vegetable oil and add sautéed ground beef until all brown.
  • Drain all liquid, add carrots, onions, and sauté for 5 minutes.
  • Add 1 pint of water and demi-glaze and cook for 45 minutes.
  • Add peas and remove from heat.
