Executive Chef, Michael Folz
The Renaissance Nashville Hotel Executive Chef Michael Folz, spend his budding career working in various free standing restaurants and country clubs throughout the Chicagoland area while earning his associates degree in Culinary Arts. Folz entered the hotel industry approximately 32 years ago as a banquet culinarian at the Stouffer Hamilton Hotel. He was mentored there by Chef Hiroshi Noguchi as he gained his culinary foundation and was promoted to Fine Dining Chef of “The Avalon”. From there, much of his experience was through promotions introducing him to other cities within the hospitality world. His career path has taken him to such cities as Baltimore, New York, Washington DC, and St. Thomas. Folz was part of the opening teams for hotels in South Carolina, and Atlanta. Now in Nashville, Chef Folz brings his unique and diverse style of cuisine to Music City, which is not only home to music legends, but is also known for food that has soul.
