ESCOLAR NUOC CHAM

Ingredients

6 five-ounce portions of escolar, or any good-quality white fish
3 in ginger, sliced
15 cloves garlic, sliced
1 red onion, diced
15 oz sweet chili sauce
½ c lime juice
1 Tbs salt
1 ½ oz fish sauce
1 ½ bunch cilantro, chopped

Method

• Brown ginger, garlic, & onion.
• Add salt, sweet chili sauce, & lime juice.
• Simmer for 5 minutes, then add cilantro.
• Puree in blender.

Method

Lightly coat the fish with the nuoc chum sauce and marinate for 3 hours.
Drain excess marinade and sear in a non stick pan. Cook until medium doneness.
Serve with fresh petit greens (mizuna, frisee, bok choy, etc.) and Purple Sweet Potato Velvet (below).

PURPLE SWEET POTATO VELVET

7 medium purple sweet potatoes, peeled & cubed
2 large white onions, roughly chopped
¼ lb butter
¾ c mirin
½ c rice wine vinegar

Boil peeled potatoes and onions until potatoes are tender. Strain.
Puree onions and potatoes.
Fold in butter (or olive oil for a healthier choice), then add mirin and rice wine vinegar. Season with salt and pepper.
