Shrimp & Grits

Shrimp & Grits

Serves 6

Ingredients for Tabasco Butter

4 tbsp Tabasco
1 tsp Honey
1 lb Butter
Salt, pinch

Ingredients for Grits
1 cup Grits
½ qts Chicken stock
½ qts Heavy cream
2 tsp Salt
Pepper, pinch
¼ lb White cheddar

Ingredients for Pickled Okra
2 lb Okra
2 cups Water
2 tbsp Sherry Vinegar
2 cups Cider Vinegar
¼ cup Garlic
10 Black Peppercorns
¼ cup Salt
½ cup Sugar
1 tsp Crushed Red Pepper

Ingredients for Shrimp & Grits
6 each Shrimp
Bell Pepper, sliced
Onion, sliced

Method for Tabasco Butter

• Soften butter at room temperature.
• Mix all together in kitchen aide.

Method for Grits

• Heat everything except grits & cheese.
• Turn to low, add grits, stirring frequently until soft about thirty minutes then add cheese.

Method for Pickled Okra

• Bring all ingredients except okra to a boil.
• Have the okra ready in a container.
• Once brine boils pour over the okra so they are entirely submerged. Refrigerate for 24 hours before using.

Method for Shrimp & Grits

• Sauté 6 shrimp per person with some sliced red peppers & onions till half way cooked, then add Tabasco butter till 100% cooked.
• Serve over grits and garnish with pickled okra.
