Feta Salmon

Serves 2

Ingredients for Feta Salmon

2 8 oz Salmon Filets
¼ cup Fresh Tomatoes, diced
¼ cup Red Peppers, diced
¼ cup Green Peppers, diced
¼ cup Yellow Onions, diced
1 tsp Fresh Garlic, diced
½ cup Spanish Capers
1 tbsp Olive Oil
¼ cup White Wine
1 oz Kalamata Olives
Old Bay Seasoning
Flour for Dusting
Salt & Coarse Black Pepper, to Taste
White Rice & Sautéed Fresh Spinach

Method for Fish

• Lightly season fish with old bay seasoning, dust with flour and place in a skillet over medium heat seasoned with the olive oil.
• Cook Salmon to desired temperature making sure to turn during cooking.

Method for Sauce

• Place a skillet over a medium heat using olive oil, sauté tomatoes, peppers, onions, garlic and capers for 3 to 4 minutes.
• Add Wine and Feta Cheese and cook for another minute. Add salt and pepper to taste.
• To finish the dish place the Salmon over White Rice and Sautéed Fresh Spinach top with Sauce.
