Bourbon Pecan Pie


3 yolks
1 cup sugar
1 cup dark corn syrup
1/2 tsp of salt
1 oz butter
.5 oz VX
.5 oz. Cumberland Cast - 40 proof

Pie Filling

1 1/2- 2 cups filling
3 3/4 cups of pecans


1. Place yolk in large bowl and make sure they are broken up.
2. Mix sugar, corn syrup, salt in pot and bring to boil over medium heat. Boil for 3 minutes, remove from heat.
3. Slowly temper warm sugar syrup into yolks.
4. Strain over china cap and then add butter and bourbon.
5. Mix pecans and pie filling in bowl then pour in par baked crust.
6. Cover crust edges with foil so crust doesn''t burn.
7. Bake 350 degrees in convection oven for 25 minutes. Top should be medium golden when finished.
8. Remove foil where pie is still hot so the foil doesn''t stick.
9. Chill pie completely before serving.

Note: The pie is supposed to be dense with pecans so make sure the pie filling doesnt exceed the amount of nuts.
