Pan Seared Diver Scallops

Ingredients

Fresh Scallops
Crawfish Tails
Beurre Blanc
Lemon Juice
Fresh Thyme
Chicken Stock
Salt and Pepper

Method

  • Sweat garlic and shallots and add the fresh thyme.
  • Deglaze with stock, reduce and add crawfish.
  • Adjust with lemon juice, salt and pepper.
  • Pan-sear the diver scallops on one side to a golden brown.
