Jumbo Lump Crab Cakes

Ingredients

2 lb Jumbo Crab
2 T Parsley
8-10 oz Crushed Saltine Crackers
4 C Mayonnaise
3 T Old Bay Seasoning
1 T Dijon Mustard
1 1/2 oz Water

Method

  • Combine mayonnaise, old bay, mustard and water.
  • Mix well and refrigerate.
  • Chop parsley and reserve.
  • Thoroughly pick crab meat, keeping pieces intact.
  • Refrigerate.
  • Crush saltines.
  • Combine crab meat with crackers and parsley.
  • Add enough seasoned mayo to bind mixture well.
  • Refrigerate mixture for 5 minutes.
  • Portion into 4 ounce cakes.
  • Sauté until golden brown and hot throughout.
  • Serve with roasted potatoes and grilled vegetables.
