Lobster Chowder

Serves 4

Ingredients for Chowder Base

3 tbsp Shallots, chopped
1 qt Lobster Stock
2 tsp Paprika
1 tbsp Sriracha
3 tsp Cornstarch
1 cup Heavy Cream
1 cup Sherry
3 tbsp Cold Water
2 tbsp Oil

Ingredients for Lobster Chowder

8 oz cooked Lobster Meat
1 Sweet Corn, cooked & removed from cob
8 oz cooked Fingerling Potatoes
2 oz Whole Butter

Method for Chowder Base

• In oil, sauté shallots until translucent.
• Add sherry and reduce by half.
• Then add cream, paprika, sriracha and lobster stock.
• Bring to simmer.
• Mix cornstarch with cold water to form paste.
• Whisk into soup. Cook 5 minutes.
• Season with salt and pepper. Puree.

Method for Lobster Chowder

• Sauté lobster, corn and potatoes in butter until very hot, add chowder base and simmer together for 10 minutes. Serve with country style bread.
