Pear & Mission Fig Salad with Michigan Manchego Cheese, Baby Red Romaine, Pear Vinaigrette, & Pistachios

Serves 1

Ingredients for Pear & Mission Fig Salad

2 Baby Red Romaine Lettuce Heads
(leaves cut in half, washed & dried)
½ cup Shaved Mantoro Cheese
3 Black Mission Figs, quartered
1 D’Anjou Pear, shaved thinly
2 tbsp toasted Pistachios
1½ tbsp Pear Vinaigrette

Ingredients for Pear Vinaigrette

½ large Shallot, finely minced & salted
1½ tbsp Honey
3¼ oz Pear Infused Vinegar
1 tbsp Whole Grain Mustard
1 cup Grapeseed Oil
¼ cup Extra Virgin Olive Oil
Salt & Pepper, to taste

Method for Pear & Mission Fig Salad

• Combine and dress all ingredients except for the cheese and the pistachios.
• Season the ingredients with salt and freshly ground black pepper to taste.
• After assembling the mixed ingredients, loosely sprinkle with the cheese and pistachios.
• Serve immediately.

Method for Pear Vinaigrette

• After mincing the shallot, liberally sprinkle with salt and mix.
• Allow the shallots to sit for 10 minutes.
• Next, add the mustard, honey and vinegar.
• Thoroughly combine with a whisk.
• While whisking vigorously, slowly drizzle both oils in while continuously whisking.
• Season with salt and pepper to taste.
