In 2002, the developers of Hotel Valencia Riverwalk asked Jeffery Balfour to come aboard and create the entire food service concept for their new luxury hotel brand. Shortly after opening, he had established himself as a rising star on San Antonio’s culinary landscape. Under Balfour’s direction, Citrus was quickly recognized as one of San Antonio’s most exciting fine dining restaurants and has received critical acclaim from across the country. Balfour realized his passion 11 years ago in Houston where he attended the University of Houston Conrad Hilton School of Hotel & Restaurant Management while he perfected his skills in new and innovative French and American regional cuisine in the kitchens of Tim Keating and Mercer Mohr at the AAA 4-diamond, La Reserve restaurant, which was consistently one of the top-rated restaurants in the country. Born and raised in Galveston, his love for Texas is evident in his ever-changing menu which features the freshest ingredients from farmers and fisheries around the state.
