Flashed Fried Calamari with Pumpkin Seed Aioli

Ingredients for Calamari

Fresh Calamari
1 lb All Purpose Flour
1 lb Rice Flour
2 T Paprika
2 T Cumin
1 T Cayenne
1 T Granulated Garlic

Ingredients for Pumpkin Seed Aioli

2 C Dry Lightly Toasted Pepitas (Pumpkin Seeds)
1 C Mayonnaise
1/2 C Sour Cream
1 T Cumin
2 T Garlic
2 Bunches - Washed Cilantro- Sliced
Water As Needed

Method for Calamari

• Simply toss together and mix with whisk.
• Fry at 375 degrees in canola or soy oil.

Method for Pumpkin Seed Aioli

• Puree all ingredients in food processor.
• Begin with pumpkin seeds and a bit of water
• Gradually add ingredients adjusting as needed
• Season with kosher salt and fresh lime
