Million $$ Chocolate Chip Cookies (Recipe courtesy of Amy Hoyt, Baking Instructor)

Yields: 3 dozen cookies

INGREDIENTS

2 C rolled oats
4 oz milk chocolate
2 1/2 C flour
1 t baking soda
1 t baking powder
1/2 t salt
2 sticks of butter, cold
1 C sugar
1 C brown sugar
2 large eggs, lightly beaten
2 t vanilla
1 1/2 C chocolate chips
1 C pecans, chopped

METHOD

  • Preheat oven to 300 degrees.
  • Line cookie sheets with parchment paper.
  • n the bowl of a food processor fitted with a steel blade, process the rolled oats and chocolate until very fine.
  • Whisk together with the flour, baking soda, baking powder and salt. Set aside.
  • Mix the butter with the sugars until just blended.
  • Mix in the eggs and vanilla.
  • Gently mix in the reserved dry ingredients, adding the chocolate chips and nuts last.
  • Scoop onto cookie sheets and bake for 8-10 minutes. Be careful not to overbake.
  • Carefully remove the cookies to a wire rack to cool.
