Chef Kevin Taylor

Chef Kevin Taylor is a Colorado native with a national reputation for his creative, unpretentious approach to American cuisine. Early in his career he was cited as a rising star by national magazines and has been a guest at the James Beard House in New York City. His dishes such as the Smoked Sweet Corn Soup with Barbecued Shrimp and Open Ravioli of Maine Lobster, Asparagus and Sweet Corn have become signatures in the industry.

Taylor has been cooking for more than half of his 44 years, beginning as an apprentice chef at the Denver Country Club under the former chef of London’s famed Savoy Hotel. During high school, Taylor worked on weekends and in the summers, learning detail by detail how a kitchen functions and every aspect of escoffier. Following his apprenticeship, he was hired as Sous Chef at Cherry Hills Country Club, one of the nation’s most exclusive clubs. In this arena, Taylor was given “carte blanche” with ordering and preparing some of the most unique and exquisite ingredients from around the world. This led to Taylor’s passion for pure, flavor-driven menus where the quality of the ingredients is allowed to shine through.

At the age of 25, Taylor opened Zenith in Denver, Colorado. Zenith garnered much local and national acclaim, including the prestigious Mobil Travel Guide Four Star rating. Taylor went on to own several restaurants in the Denver area, including local favorite Dandelion, in Boulder.

In November 1998, Taylor opened his eponymous Restaurant Kevin Taylor in the luxury boutique Hotel Teatro, topping a 20-year culinary career with an opulent and contemporary dining experience that was previously unseen in Denver, raising the bar on service standards and presenting a refined menu of contemporary French cuisine. Since its opening, Restaurant Kevin Taylor has annually received the AAA Four Diamond award, the Mobil Travel Guide Four Star award, and the Wine Spectator “Best of Award of Excellence.” It was recently named one of Travel + Leisure’s “50 Best Hotel Restaurants.”

Prima Ristorante, also in the Hotel Teatro, was voted one of Denver’s Top Ten New Restaurants of 2005 by 5280 Magazine. Prima serves modern Italian cuisine that is currently featured in many restaurants in Italy. Taylor has built his own vision and offers a light and fresh take on Italian classics. Prima has been warmly received by Denver’s food critics and has earned the Wine Spectator’s “Award of Excellence.”

In September 2005, Taylor partnered with Opera Colorado, Centerplate and the Denver Center for Performing Arts to open the opulent, Kevin Taylor’s at the Opera House. Located on the lower level of the new Ellie Caulkins Opera House, the 120-seat a la carte dining room offers a unique dining experience for the pre-theater crowd or the general public.

In addition, Kevin Taylor operates Palettes at the Denver Art Museum, which has garnered praise for its American cuisine and high concept design, and is part of the growing trend among leading art museums to incorporate a high profile dining experience. Currently closed while the museum undergoes the widely anticipated expansion by renowned architect Daniel Leibeskind, Palettes is expected to re-open in 2006.

“It’s a very full plate,” says Taylor. “But running restaurants is in my blood. Having the chance to continually re-define and be a part of a dynamically changing Denver restaurant scene keeps me motivated and excited for the future.”
