Stephen Vice, executive chef of McCormick's Fish House & Bar, joined the McCormick & Schmick’s team in 1979. Executive chef at McCormick's from 1991 to 1996, Vice originally came to Denver after serving as executive chef at three of McCormick & Schmick's Oregon locations.
Chef Vice’s experience includes spearheading McCormick's catering program with the Professional Golf Challenge, which featured an elegant seated dinner for 3,000,as well as the menus and food presentation for 28 corporate chalets at the Hillsboro Air Show featuring the Blue Angels. In Denver, he created and managed the food service for 3,500 at McCormick's annual "LoDo Fais Do Do Crawfish Boil and Street Party." Vice also prepared an elaborate lunch for President Clinton and his entourage during a fundraiser at The Oxford Hotel.
Vice returned to Denver in 1998, as McCormick's executive chef, after serving two years in the same capacity at Jake's Famous Crawfish, McCormick & Schmick's flagship restaurant in Portland, Oregon. During his time at Jake's, Vice was responsible for training the other chefs who would later run their own kitchens at McCormick & Schmick's locations throughout the U.S.
A former member of the Chef de Cuisine Society of Oregon and Colorado, Vice raised the sophistication of the banquet and catering program for McCormick's Catering in Denver, and his creative flair is evident in the dining room's daily menu.
With a degree in music and a desire to perfect his own trumpet skills, Vice's favorite assignments include providing catered meals to Oregon Jazz Festival performers Doc Severinson, Anita Baker and the Pointer Sisters. He led the McCormick's catering team at Portland's Performing Arts Center Civic Auditorium and provided his expertise at a seated dinner for 8,000 at the International Association of Police Chiefs convention in Portland.
Vice lives with his wife, three sons and a daughter in Aurora, Colorado.
