BEAURIVAGE SALADE EXOTIQUE WITH CHUTNEY VINAIGRETTE

INGREDIENTS

4 hearts of palm, quartered
4 Belgian endives, cut at an angle in 1/2-inch wide pieces
2 bunches watercress, well chopped
4 large tomatoes, sliced medium
Chutney Vinaigrette (recipe follows)
1T fresh chives, chopped

INGREDIENTS: CHUTNEY VINAIGRETTE

1 T lemon, juiced 1/4 t curry powder 1 t English dry mustard 1/2 t salt
1/4 t white pepper
1/2 C virgin olive oil
1/2 C Major Grey chutney, chopped

METHOD

  • On a large serving platter, place the hearts of palm, Belgian endives, watercress, and tomato slices.
  • Arrange these items in an attractive way.
  • Spoon the Chutney Vinaigrette over the salad.
  • Sprinkle on the chives.

    METHOD: CHUTNEY VINAIGRETTE

    • In a small bowl place the lemon juice, curry powder, red wine vinegar, dry mustard, salt, and white pepper.

  • Mix the ingredients together well.
  • Add the olive oil and whisk it in well.
  • Add the chopped chutney and mix it in.
  • Chill the dressing in the refrigerator.
