“Take a walk back in history. Pizarro went to Peru looking for Gold; it was the food he should have brought back home. This is exactly what the Jaimes did 17 years ago, hailing from Lima. The air is filled with music that defines the Inka culture and the food itself conveys an excitement and immediacy rare in today’s cooking. Although Peru is far away, El Pollo Inka is right down the road.”
