STUFFED FIVE SPICE ROASTED POUSSIN WITH BROWN RICE AND PEA TENDRILS

INGREDIENTS

1 ea poussin (baby chicken)
1 t five spice
3 t olive oil
1 t corn syrup
2 t soy sauce
2 t sugar
2 t shallots, minced
1 t sesame oil
salt and pepper
1 oz pea tendrils
3 oz brown rice
1/2 C chicken stock
1/2 C water
1/2 yellow onion, minced
1 t parsley, chopped

METHOD

  • Season poussin with five spice, soy sauce, sugar, sesame oil, corn syrup, and black pepper: marinate for 2 hrs.
  • Roast in hot oven at 350 degrees for 1/2 hour. Remove and cool.
  • In a medium pan heat small amount of oil and sweet onions, add brown rice and toast lightly, then add chicken stock & water and simmer until tender.
  • Season with a little salt and pepper, finish with chopped parsley, then cool.
  • Stuff poussin with brown rice mixture and roast for about 20 minutes at 400 degrees.
  • Sauté pea tendrils quickly. Serve with poussin.
