2 Eggs, lightly beaten with 3 tbs. water
1 cup flour

Ingredients for Fruit Salsa
1 Mango, med. diced
1/3 Fresh Pineapple, med. diced
2 Roma Tomatoes, med. diced
½ Medium Red Onion, fine diced
¼ cup Fresh Cilantro, fine diced
1 Jalapeno Pepper (if desired) fine diced
