Crab Stuffed Prawns

Ingredients for Crab Stuffed Prawns

5 16/20 Prawns
2 oz Snow Crab meat
Salt & Red Pepper
1 tbsp Garlic, chopped
1 tbsp Shallots, chopped
1 tbsp Lemon juice
1 tbsp Parsley, chopped
2 oz clarified Butter
½ tbsp Paprika
2 Egg Yolks
1 tbsp Heavy Cream
1 tbsp White Wine
1 tbsp Bread Crumbs

Method for Crab Stuffed Prawns

• Squeeze most of the juice out of the crabmeat.
• Sautee shallots, garlic and ½ tbsp of parsley using ½ oz of clarified butter, add salt and pepper cook until sweet.
• Deglaze with 1 tbsp white wine.
• Add heavy cream. Reduce until very thick.
• Cool and combine crabmeat, 1 egg yolk and bread crumbs.
• Make the hollandaise using 1 egg yolk, 1 oz clarified butter, salt, pepper and 1 tbsp lemon juice.
• Butterfly the prawns and stuff with the crabmeat and coat with remaining butter.
• Sprinkle paprika on top of stuffed prawns and then bake at 350° for 8-9 minutes.
• Spoon the hollandaise on five spots on the plate and place prawns on the sauce.
• Sprinkle remaining parsley on top of the prawns.
