Asparagus Goat Cheese Stuffed Flank Steak



5 lbs. Flank steak
10 pcs. Asparagus
1.5 pounds goat cheese
Salt & pepper
Olive oil


Season asparagus w/ salt & pepper and drizzle w/ olive oil.
Roast in oven at 350 degrees until tender.
Set aside.
Take flank steak and split horizontally leaving both pieces attached to each other.
Season flank steak.
Layer goat cheese and asparagus down lengthwise of flank steak at end.
Roll the flank steak up keeping asparagus and cheese inside.
Flank steak can then be secured with food grade butchers twine to prevent unrolling.
Sear flank steak and finish roasting in 350 degree oven until desired doneness.
Slice stuffed flank steak to desired thickness and serve with favorite starch.
A good sauce to accompany this would be a nice demi glace.
