Mango Cheesecake

Serves 6

Ingredients for Crust

11/2 cup Graham Cracker Crumbs
1/2 cup Sugar, granulated
1/3 cup Butter or Margarine, melted

Ingredients for Mango Cheesecake

3 8 oz Cream Cheese, packages
3/4 cup Sugar
1 tsp Vanilla
3 Eggs
2 cup Mango Pulp

Method for Crust

• Combine graham cracker crumbs, sugar & butter in medium bowl.
• Press onto bottom of 9-inch springform pan.

Method for Mango Cheesecake

• Mix cream cheese, sugar & vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended.
• Add Mango puree; mix until smooth. Pour into prepared crust.
• Bake at 300 degrees for 1 hour and 15 minutes our until center is set.
• Loosen cake from side of pan with knife or spatula.
• Cool completely.
• Refrigerate 4 or more hours before serving.
• Garnish with Mango Pulp.
