Yields: 4 servings


8 cloves garlic, thinly sliced
1 C olives, good quality, pitted and rough, chopped
1/4 C capers, drained
1 large tomato, diced
1 small can anchovies, drained
1 lb penne pasta
drizzle olive oil
to taste salt
to taste pepper


  • Add pasta to boiling water. When halfway done, heat large skillet.
  • Drizzle olive oil to heated pan to coat the bottom.
  • Add garlic, tomatoes, capers and olives.
  • Sauté over medium heat until garlic is cooked, about 2 minutes.
  • Mash anchovies under knife or spoon, then add to skillet. Toss all ingredients.
  • Season with salt and pepper. Add a handful of parsley. Drizzle pasta with olive oil.
  • Serve in pasta bowls.
  • Estimated preparation time: 20 minutes.
