Canard aux Pommes Duck with Apple Calvados Sauce

Serves 4

Ingredients for Canard aux Pommes

4 6oz Duck Breasts (or substitute a 4-5 lb. Whole Duck)
2 Golden Delicious Apples
4 tbsp Sugar
4 tbsp Red Wine Vinegar
2 cups Brown Sauce
2 tsp Corn Starch
4 oz Calvados or any Apple Brandy
2 oz Butter4 6oz Duck Breasts (or substitute a 4-5 lb. Whole Duck)
2 Golden Delicious Apples
4 tbsp Sugar
4 tbsp Red Wine Vinegar
2 cups Brown Sauce
2 tsp Corn Starch
4 oz Calvados or any Apple Brandy
2 oz Butter

Method for Sauce

• Caramelize sugar in vinegar until the sugar and vinegar reaches a rich brown color.
• Add brown sauce to the caramelized sugar.
• Whisk calvados and corn starch together.
• Whisk the two together to form the apple calvados sauce.
