Ingredients for Wild Coho Salmon Fillet

2 lb Coho Salmon
1 cup Butternut Squash, diced & blanched
8-12 each Bacon Strips, chopped
1/2 cup Pecans, toasted
1/4 cup Maple Syrup
2 tbsp Butter, unsalted

Method for Wild Coho Salmon Fillet

• Portion the salmon into 4 pieces.
• In a non-stick pan, over medium-high heat, cook the salmon for 2 minutes on each side or to desired temperature.
• Remove from pan and reserve.
• Add the bacon and cook until crisp.
• Remove 1/2 of the bacon fat, and add the butternut squash, pecans and maple syrup, stirring frequently until simmer.
• Remove from heat and stir in the butter.
• Pour mixture over the wild salmon and serve.
