Ingredients for She Crab Soup

1/4 lb Butter
1/2 cup Flour
1 lb Crab Claw-Meat
1 pt Milk
1 pt Half & Half
1 tbsp Hudson's Seasoning
1/2 cup Dry Sherry
1/2 cup fine chopped Onion
1/2 cup fine chopped Celery

Method for She Crab Soup

• Heat sauce–medium heat.
• Sauté onions and celery with butter. Heat until translucent. Add flour and cook until smooth.
• Add milk gradually, stirring, and then add seasoning and crabmeat.
• Simmer on low heat for about 30 minutes until soup becomes the desired consistency.
• Remove from heat and add sherry and half and half.
