TUNA CITRON SALAD

Ingredients

6 oz miso
3 oz sugar
2 oz vinegar
1 oz sesame oil
12 oz sashimi grade tuna, cubed
12 oz avocado peeled and cubed
4 oranges

Method

  • For the dressing, combine the miso, sugar, vinegar and sesame oil and mix.
  • Cut the top portion of the oranges off (just enough to expose the fruit inside). Save the top.
  • Hollow out the inside of the oranges, but retain the juice left behind.
  • Cut the extracted orange, tuna and avocado into cubes.
  • Combine the cubed orange, tuna and avocado with eight teaspoons of the dressing and the retained juice from the oranges and toss.
  • Fill the hollowed orange with the salad and then you can use the saved orange top as a lid.
