Blazing Hunter Steak

Ingredients for Steak

4 14 oz. NY Strip Steaks
2 ½ oz. Extra Virgin Olive Oil
4 T. Kosher Salt
3 T. Cracked Black Pepper

Ingredients for Sauce

2 T. Butter
2 Shallots, chopped
4 oz. Button Mushrooms, chopped
1 Cup White Wine
2 Cups Demi-glace or rich brown gravy
¼ cup Tomato paste
1 t. Parsley, chopped
½ t. Tarragon, chopped
Salt and Pepper to taste

Method for Blazing Hunter Steak

• To start rub steaks down with oil, salt, and pepper and set aside at room temperature to allow the steaks to marinate.
• Next melt butter into a medium size sauce pot and sauté shallots and mushrooms until the onions are caramelized.
• Add the tomato paste and stir continuously until the paste has darkened a bit and the smell of tomatoes is full.
• Now deglaze the pot with your white wine and add the remaining ingredients, allowing the sauce to simmer until reduced by a quarter.
• Next, cook steaks on open flame until desired temperature and then remove from heat and cover with hunter sauce.
• Last but not least pour a one ounce of over-proof rum over steak and sauce then light a blaze to intensify and caramelize the sugar in the sauce.
