Tataki of Kobe beef with Anchovy Butter, Sweet Asian sauce and Peanuts in Textures

Yields: 5 servings

INGREDIENTS: KOBE BEEF

5 3-ounce Kobe steaks
sea salt
togarashi (Japanese pepper and citrus powder)

INGREDIENTS: ANCHOVY BUTTER

4 oz good high fat count butter
3 T anchovy paste
5 capers crushed
3 cloves garlic, roasted
1 shallot, minced
1 lemon, juiced
1T parsley chiffonade
to taste sea salt
to taste white pepper

METHOD: KOBE BEEF

• Dust beef with sea salt and togarashi.
• Char, sear and slice on the peanut purée, anchovy sauce and Asian sauce.

METHOD: ANCHOVY BUTTER

• Melt butter in sauce pot.
• Add all other ingredients and mix until sauce is formed

INGREDIENTS: ASIAN SWEET SAUCE

1/2 C unagi sauce or eel-flavored bbq sauce
1 T sesame oil (black)
3 T tamari soy sauce
1 dash sirichia sauce or any Chinese hot sauce
1 orange, juiced
1/2 lime, juiced
1 jalapeño pepper minced and blanched in simple syrup

METHOD: ASIAN SWEET SAUCE

• Combine all ingredients in a bowl and whisk.

INGREDIENTS: PEANUT SAUCE

3T smooth peanut butter
1t Mae ploy chili sauce
1/2 t ginger, grated
1 t sesame oil
1 t tamari soy sauce
1 t lime juice

METHOD: PEANUT SAUCE

• Combine all ingredients in a bowl and whisk.
